I wanted to write a review on the Smoked Salmon on Ciabatta sandwich that
Chef Neuhold created for my husband & me & another couple today @ Fruita's
Fall Festival. We had been biking & of course were quite hungry but nothing
appealed until we were greeted by the sight & smell of Chef Neuhold holding
court over his smoker from which came beautiful pieces of smoked salmon.
Well, we couldn't resist. The four of us split two sandwiches which, with
the generous helpings of potato salad, was more than enough for our bikers'
appetites. They were wonderful! The salmon was smoky, moist, tender,
savory - so full of flavor. The bread was chewy & hearty - a nice
counterpoint to the meatiness of the salmon. A little creamy dressing on
the bread, a little lettuce to add some crunch, a fat dill pickle spear
rounded out a wonderful lunch. It was a welcome change from the typical
festival fare.
We will all be ordering that exquisite smoked salmon (which we're told
freezes well) & will try the recipes which we received with our sandwiches.
